Devil's Food Cupcakes

2 cups sifted Swam Down Cake flour
1 teaspoon salt
1/2 cup Baker's cocoa
1 3/4 cup sugar
1/2 cup crisco
1 1 /3 cup buttermilk
1 teaspoon vanilla
3 eggs, unbeaten

Combine flour, salt, soda, cocoa and sugar in sifter. Stir in shortening just to soften. Sift dry ingredients. Add half of the buttermilk and the vanilla. Mix till all flour is dampened. Then, beat 2 minutes at medium speed. Add the remaining buttermilk and eggs. Beat 1 minue longer. Spoon batter into paper-lined muffin pans. Fill only one-half full. Bake at 350 degree for 25 to 30 minutes. Makes 24 cupcakes.

Chocolate Frosting:

1/2 cup cocoa
1/4 cup butter crisco
2 cups sifted powdered sugar
3 to 5 tablespoons evaporated milk
1 teaspoon vanilla

Beat all ingredients well and frost on cupcakes.
